*Chicken And Bean Tacos* (Diabetic Recipe)

Hello every one! Today I'm posting another diabetic recipe. I wanted to give you all a recipe that I thought you would like. This doesn't have any of those strange ingredients that taste funny either. Its a little different from the beef taco, but this is healthy and it tastes good too. I hope you enjoy this one. *Chicken And Bean Tacos* (Diabetic Recipe)

Servings: 4

1 Whole Chicken Breast, Boneless, Skinless, Trimmed, Sliced Thin
1 Tsp. Minced Garlic
1/8 Tsp. Red Pepper, Ground
3 Tbls. Olive Oil, Divided
1 Cup Onion, Chopped
1/3 Cup Canned Diced Tomatoes, Sodium Free
2 Cups Canned Kidney Beans, Rinsed And Drained
8 8" Inch Whole Wheat Tortillas, Low Fat
½ Cup Avocado, Sliced Thinly
1 Cup Salsa, Optional
½ Cup Sour Cream, Low Fat, Optional
¼ Tsp. Sea Salt
¼ Tsp. Ground Black Pepper, Freshly Ground

You need a small bowl, mix chicken, garlic, red pepper, and 2 tablespoons of the oil.
Season with sea salt and freshly ground black pepper.
Toss to coat chicken.
Use a medium nonstick skillet over medium-high heat,cook chicken until no longer pink and the juices run clear.
Transfer chicken to a plate.
In the same pan over medium heat, saute' onion in the remaining 1 tablespoon oil, until soft and translucent.
Stir in the tomatoes, with the juice.
Add beans and stir, reduce heat to low, and cook until heated through.
Warm tortillas in the oven.
Fill each tortilla with chicken, bean mixture, and 1 tablespoon of avocado.
Serve with salsa and sour cream, if desired.
